Knife Edge: Chasing Michelin Stars season 2 trailer arrives on Apple TV – Sixteen restaurants will put reputations, livelihoods and family legacies on the line when the acclaimed culinary docuseries returns.

Knife Edge: Chasing Michelin Stars season two premieres on Apple TV on Friday, 25 September with two episodes. Host Jesse Burgess again takes viewers inside the year-long Michelin Guide cycle, while Gordon Ramsay and Studio Ramsay Global return as executive producers.

The new season broadens the programme’s international scope. For Australian food and travel viewers, it offers a close look at the pressure behind Michelin recognition across Great Britain and Ireland, the United States, Brazil, France, the Nordics and Germany.

Sixteen restaurants face the Michelin test

The eight-part season follows restaurants at very different turning points. One chef and his family risk everything to put a small island on Michelin’s map. Elsewhere, two generations of a famous culinary family pursue recognition on their own terms.

Burgess and the production team have privileged access to kitchens during the Michelin Guide’s year-long calendar. That means the programme can follow the decisions, financial pressures and personal sacrifices that happen well before the Stars are announced.

The restaurants range from intimate tasting rooms to a high-volume dining room serving 220 guests. Despite those differences, every team faces the same uncertainty: Michelin’s decision can validate years of work, change a business overnight or leave a chef reassessing the next move.

Another pair of chefs voluntarily surrendered a Michelin Star when they opened a new restaurant. They now have only 52 days to win it back. A sandwich shop becomes a fine-dining restaurant at night, while a young couple tries to place Filipino cuisine at the centre of one of America’s most competitive dining scenes.

Great Britain and Ireland

  • Vraic, Guernsey: Chef Nathan Davies makes a daring new start after leaving Michelin-Starred SY23. He and his family want to place the small island on Michelin’s map. The coastal restaurant is built around Guernsey seafood, local produce and freshly foraged seaweed.
  • Ynyshir, rural Wales: Chef Gareth Ward seeks a historic third Michelin Star at an immersive 16-seat destination. The uncompromising 30-course experience combines food, music and theatre, placing intense expectations on a small team.

Florida

  • Calusso, Fort Lauderdale: At the newly reimagined Pier Sixty-Six, chef Jonathan Kaiser attempts a rare balance. He must deliver Michelin-level precision and consistency while running an ambitious, high-volume restaurant that can serve as many as 220 guests.
  • COTOA, North Miami: Chef Alejandra Espinoza takes on her most ambitious project yet. Drawing on childhood memories and French training, she presents a contemporary celebration of Ecuadorian ingredients, culture and identity through a globally influenced menu.
  • Stubborn Seed, Miami Beach: As Top Chef winner Jeremy Ford expands his culinary business, he entrusts the Michelin-Starred flagship to a young kitchen team. They must protect its hard-earned recognition while showing that the restaurant can continue to evolve.

Brazil

  • Madame Olympe, Rio de Janeiro: As he enters his seventies, culinary figure Claude Troisgros makes a personal bid to reclaim Michelin glory. The intimate restaurant honours his mother and celebrates his pioneering combination of French technique and Brazilian ingredients.
  • Oseille, Rio de Janeiro: Thomas Troisgros steps beyond his family’s celebrated culinary legacy with a playful counter-style restaurant. His challenge is to establish an identity of his own while seeking greater Michelin recognition.
  • Evvai, São Paulo: Chef Luiz Filipe Souza and pastry chef Bianca Mirabili pursue culinary history. Their goal is to make Evvai the first restaurant in Latin America to earn three Michelin Stars.

France and the Nordics

  • Mallory Gabsi, Paris: Guided by renowned mentor Yannick Alléno, rising chef Mallory Gabsi pursues a second Michelin Star. At the same time, he must manage the pressure that comes with expanding his business in Paris and beyond.
  • Erre, Burgundy: Clément Vergeat and pastry chef Marine Mateos leave Paris to open a destination restaurant in Burgundy’s remote forests. Their gamble depends on earning Michelin recognition during the restaurant’s first year.
  • Adam Albin, Stockholm: Adam Dahlberg and Albin Wessman closed their Michelin-Starred restaurant and reopened in a larger, more ambitious space. They have only 52 days to reclaim the Star they gave up and may even be capable of earning a second.
  • Ekstedt, Stockholm: Internationally recognised chef Niklas Ekstedt pushes his electricity-free approach to fine dining even further. Relying on fire and ancient Scandinavian techniques, he chases a second Michelin Star.

Germany and California

  • L.A. Jordan, Deidesheim: Daniel Schimkowitsch brings precision and ambition to a globally influenced menu. He leads L.A. Jordan in the difficult pursuit of a third Michelin Star.
  • tulus lotrek, Berlin: Longtime creative partners Maximilian Strohe and Ilona Scholl seek a second Star. They also have to decide how the restaurant can evolve without losing the warmth, personality and intuitive cooking at its heart.
  • Restaurant Naides, San Francisco: Patrick Gabon and Celine Wuu champion Filipino cuisine through an intimate tasting menu. The food connects with Gabon’s upbringing as the couple pursues the restaurant’s first Michelin Star in a highly competitive city.
  • Troubadour Bread & Bistro, Healdsburg: Sean McGaughey and Melissa Yanc McGaughey run a neighbourhood bakery and sandwich shop by day, then transform it into an intimate tasting-menu restaurant at night. Bread sits at the centre of the couple’s attempt to win a Michelin Star.

Behind the series

Knife Edge: Chasing Michelin Stars is produced for Apple TV by Studio Ramsay Global, a Fox Entertainment Company. Gordon Ramsay, Lisa Edwards, Lorraine Charker-Phillips and Jill Greenwood serve as executive producers, while James Callum directs the series.

The first season earned a BAFTA Television Award nomination in the Factual Entertainment category. Season two again places the chefs’ personal stories beside the secretive Michelin judging process.
