They joined the gold rushes of Victoria, NSW and Western Australia. Some with an entrepreneurial eye saw a gap in the food business.
With an added dollop of modern American culture – Hollywood and hamburgers – in just a few years, thousands of cafés and milk bars had popped up across the nation becoming “a curious symbol of the Australian country town.”
