JOH – PAM’S PANTRY
Pam Zielke is a suburban Santa. The 57-year-old has created a street pantry outside her Canberra residence to give old toys new homes. Pam is part of a community of Canberrans who generously devote time and energy to people in need via street pantries. Tonight, Joh finds Pam getting ready for a Christmas drive, which is always a busy time of year – last year she helped 44 children, 19 women, 10 men and one grandmother. But as Joh finds out at another nearby street pantry, these boxes of generosity aren’t just for kids – they help all sorts of people who require a little extra help.

One of Ed’s favourite fruits is the mango, which might explain why he’s travelled to Darwin to get the jump on mango season! Where better to learn about this succulent, sun-drenched fruit than at a mango farm, run by a family who’ve been farming for 20 years. Ed learns everything there is to know about this most summer of fruits and with 23 million mangoes produced each year, this family know what they’re talking about!
FAST ED – ONE-POT CHICKEN & MANGO CURRY WITH MANGO-MINT SALSA
Mangoes of course are a sweet fruit perfect for summer breakfast and treats, but don’t discount the mango savoury dish. We probably all had a mango chicken dish as kids, so tonight Ed’s going to give it a modern update, basing it in an Indonesian or Thai style light curry. A mint-mango salsa is the perfect accompaniment with the sweetness counter-acting the heat of the curry. Ed’s updated mango chicken is the perfect reason to buy that extra mango this summer.

It’s easy to get caught up and buy too many mangoes during summer. Don’t fear though, they won’t go to waste with Ed’s easy recipe for mango cordial. It’ll be a perfect refresher on those long hot days.
